Up in Smoke gives out awards, receives praise

[August 29, 2011]  The first-ever barbecue cook-off competition during the Lincoln Art & Balloon Festival has made its mark on the Kansas City Barbeque Society circuit, receiving compliments from several participants who travel exclusively to KCBS events.

Positive comments were made with regard to the overall organization of the event, as well as the ease of parking, space for equipment and access to utilities.

Mike Spann, of Milton, and Peter Wright, of Pittsfield, together are the Lion bout the Q team. They have competed in 12 KCBS events this year so far and said some events that have been up and running for several years don't run as smoothly as the one in Lincoln.

Tom and Linda Anderson, Springfield, are Monster Que. On Friday, Linda said, "We were assigned a spot and were able to park as soon as we got here. Sometimes the organizers don't seem to know what to do with you after you arrive.

"We love being parked against the curb, so we can cook in the open and talk to people as they pass by," Linda remarked. "We've had to park side by side before, so you looked like a trailer park. The cooker was in the back and we couldn't see anybody. This is very nice -- and clean, too."

Barbecuers got settled on Friday and began the preparation and cooking process in the middle of the night.

According to KCBS rules, each of the four meat categories must be turned in to the judges at specific times: chicken at noon, pork ribs at 12:30, pork shoulder at 1 p.m. and beef brisket at 1:30. A five-minute window before and after the designated time is allowed, but nothing more or less. An atomic clock was displayed on the receiving table to make competitors aware of their turn-in times.

Awards were announced at 4 p.m. Saturday by event coordinator Chris Graue. He recognized the committee who was responsible for organizing the event and said: "The guys in the green shirts are on the committee that organized this well-received event. I have been credited with bringing the event to town and putting it together, but it took all of these people to make it happen."

Winners of the Kansas City Barbeque Society-sanctioned Up in Smoke on the Square competition are as follows, along with the division sponsors and representatives:

  • Chicken -- Bandit BBQ; division sponsored by State Bank of Lincoln, with David Irwin, bank vice president, presenting.

  • Pork ribs -- Able Acres; Nikles Chevrolet of Mason City, Brad Nikles.

  • Pork shoulder -- Twyford BBQ & Catering; Stuffed Aria, Chad Batson.

  • Beef brisket --- A Boy & His BBQ; Croft Fertilizer Services.

  • Reserve grand champion -- One2BBQ; Lincoln IGA, Charlie Lee, and Graue Inc., Chris Graue.

  • Grand champion -- Able Acres; Lincoln IGA and Graue Inc.
