Thirty-thirty five young men, ranging from
11-18 years old, of Boy Scout Troop 102 started preparing for the
8th Annual Pork BBQ Dinner on Wednesday evening.
With help from their Den Leaders, the boys rub the meat with BBQ
spice and sprinkle with apple juice, then put roasts in bags to
marinate for a couple of days. Late Friday evening another crew
transferred roasts to outdoor smokers to begin that slow 'for
goodness sake' cooking. Then several troop members and their
families stayed for all night vigilance.
The 800 pounds of pulled pork will be used to
serve 1200 people on Sunday, March 20th from 10:30 a.m. to 2:00 p.m.
at the Knights of Columbus Hall in Lincoln. Along with the pork
sandwiches, those purchasing tickets for $7.50 can expect potato
salad, slaw, baked beans, and a selection of homemade desserts.
