Local Scouts prep for Sunday's annual Spring Boy Scout Barbecue

The first official day of spring is still a few days away, but here in Logan County, a sure sign that we don't have much longer to wait is the annual Spring Boy Scout Barbecue. That special event will take place this Sunday, March 17th at the Knights of Columbus Hall in Lincoln. The meal service will take place from 10:30 a.m. to 2 p.m. On the menu will be the traditional smoked and pulled pork, Charlie Lee's famous baked beans, coleslaw, potato salad, choice of beverage. Dine in or carry out is available.

To prepare just over 900 pounds of pork for the smoker/cookers, the members of Troop 102 met on Wednesday evening to put the spice rub on the meat. This is an annual undertaking for the boys and one that they enjoy in spite of the amount of work involved.

The boys were taking care of business, first washing hands and putting on their sanitary gloves, which for some was an adventure in its own right. Then it was an hour of rub, rub, rub. To prepare the meat, the scouts first sprayed down the meat with apple juice then applied the dry rub. The apple juice adds flavor and also gives the exterior of the meat some moisture to help keep the spice rub in place on the meat.

 

 
 
 

 

 

 

 


The large pieces of meat were then placed in the fridge to marinate until cooking time, which will start on Friday night.
