Pineapple Cheesecake Bars

Base:
1 cup flour
½ cup sugar
½ cup margarine

Filling:
2 tablespoon sugar
1 (8 oz.) package cream cheese, softened
2 tablespoon milk
1 teaspoon vanilla
1 egg
1 (20 oz.) can crushed pineapple, drained

Topping:
1 cup coconut
1 tablespoon margarine, melted

In small bowl, combine all base ingredients until crumbs form. Press in the bottom of 9-inch square baking pan. Bake crust in preheated 350 degree oven for about 12 minutes or until lightly browned. In small bowl, beat sugar, cream cheese, milk, vanilla and egg at medium speed until smooth; stir in pineapple. Pour over partially baked crust. Combine coconut and 1 tablespoon melted margarine; sprinkle over filling. Return to oven and bake 15-20 minutes or until filling is set and coconut is golden brown. Cool completely; cut into bars. Keep extra bars in the refrigerator.
