Simple Lemon Bars

“I love how easy these are to make.”

1 (18.25 oz.) package lemon cake mix
1 egg
½ cup vegetable oil
1 (8 oz.) package cream cheese, softened
1/2 cup sugar
2 tablespoon lemon juice

In large bowl, combine cake mix, egg and oil; mix well to form crumbs. Reserve one cup for the topping, and pat the rest into an ungreased 9x13 inch pan. Bake for 15 minutes in the 350 degree preheated oven. Remove from oven and set aside to cool. In another bowl, beat the cream cheese with the sugar and lemon juice until smooth. Spread the mixture evenly over the baked crust. Crumble the reserved cake mix mixture over the top. Put back in oven and bake for an additional 15 minutes or until filling is set and the topping is lightly browned. Cool before cutting into bars. Refrigerate leftovers.
