Banana Cake

“The combination of the banana cake and caramel frosting is delicious.”

½ cup shortening
1 1/2 cups sugar
2 eggs, beaten
1 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup buttermilk
2 medium size ripe bananas, mashed
2 cups flour
½ teaspoon salt
1 teaspoon vanilla
½ cup pecans chopped (optional)
Caramel Frosting:
¼ cup butter or margarine
½ cup brown sugar
2 tablespoons milk
1 ½ cup powdered sugar
¼ teaspoon vanilla

In bowl; cream together shortening and sugar. Add and blend in eggs and the baking soda, dissolved in the buttermilk. Add bananas, flour, salt, vanilla and pecans; blend well. Pour batter in greased 9 x 13 inch pan. Bake 350 degrees oven for abut 30-35 minutes or until top springs back when touched lightly in center.
To make Caramel Frosting: In saucepan, melt butter. Add brown sugar. Stir constantly and cook over low heat for 2 minutes. Add milk and continue cooking until mixture comes to a boil. Remove pan from heat and add powdered sugar and vanilla. Blend well. Frost warm cake with warm frosting.
