Student Pleasin’ No-Bake Cookies

“I’ve made hundreds of these cookies over the years, especially in the CEL cafeteria.”

1/2 cup margarine
1/4 cup milk
2 cups sugar
1/3 cup unsweetened cocoa powder
˝ cup peanut butter
1 teaspoon vanilla extract
3-4 cups rolled oats
optional: ˝ cup coconut

In 3 quart pan, combine margarine, milk, sugar and cocoa. Stir and bring to boil over medium heat. Let boil for 1 minute, do not stir. Remove from heat. Stir in peanut butter, oats (start with 3 cups) and vanilla until evenly distributed. Add more oats if needed (depends on the weather on how sticky they are) Drop by heaping tablespoon onto parchment or waxed paper. Cool.
