Lemon Or Lime Bars

Crust:
2 cups flour
1/2 cup powdered sugar
1 cup margarine
Filling:
4 eggs
1/3 cup lemon (or lime) juice
1/4 cup flour
½ tsp. baking powder
2 cups sugar

Powdered sugar for sprinkling on top


Preheat oven to 350 degrees. Make crust in a medium bowl; stir together the flour and powdered sugar, cut in the butter until the mixture forms crumbs. Press in the bottom of a 9x13-inch pan. Bake for 20 to 25 minutes in the preheated oven, until crust is light golden brown. Meanwhile prepare the filling. In the same medium bowl with an electric mixer, beat the eggs, sugar, flour and baking powder; stir in the lemon juice. Pour the filling over the crust while it is still warm from the oven. Bake for an additional 25 to 30 minutes until the top is slightly browned. Remove from the oven and cool. Sprinkle with additional powder sugar. Cut into squares.
