On Wednesday evening,
members of the local Boy Scout Troop 1102 were busy in the meat room
at the Lincoln IGA. They were preparing the meats that will be
smoked and served at the annual Boy Scout BBQ on Sunday, March 20th.
This year it was a new experience for some of the scouts. After they
became accustomed to the feel of the meat and the coldness of the
product and the room, they fell into the process quickly.
The kids appeared to be having a good time preparing the meat. The
process includes rubbing seasoning all over each piece. The pork
then has time to absorb the seasonings before being placed in
smokers and cooked low and slow for a very long time. When the meat
is finished, volunteers will work to shred the pork into bite-sized
pieces.
On Sunday, the food will be served to hungry guests at the Lincoln
Knights of Columbus from 10:30 a.m. to 2 p.m. The menu will include
pulled pork, baked beans, potato salad, coleslaw, desserts and
drinks.
The proceeds from the annual fundraiser meal will support local boy
scout activities.
