2019 Logan County Fair LINCOLN DAILY NEWS July 28-August 4, 2019 Page 231 FRIDAY, AUGUST 2, 2019 Cake Recipes Rich Chocolate Cake Mary Johnson 2 cups all-purpose flour 1 ¼ cups granulated sugar 2/3 cup Nestle Toll House baking cocoa 1 ½ tsp baking powder 1 ½ tsp baking soda ½ tsp salt 1 cup milk 1 cup water ½ cup vegetable oil 2 large eggs 2 tsp vanilla 1 2/3 cup chocolate chips Preheat oven to 350 degrees. Grease two 9-inch pans. Combine flour, granulated sugar, cocoa, baking powder, baking soda, and salt in large mixing bowl. Add milk, water, vegetable oil, eggs, and vanilla extract. Blend until moistened. Beat for 2 minutes. Batter will be thin. Pour into prepared pans. Sprinkle each layer with 1/3 cup morsels. Approximately 10-15 mins preparation time. Chocolate Powder Sugar Frosting 1 stick butter 3 T cocoa 6 T buttermilk 1 tsp vanilla Combine margarine, cocoa, buttermilk, and vanilla. Heat until melted, then add 1 box of powdered sugar. SPICE CAKE 2 ¼ cup flour 1 ½ cup packed brown sugar 1 cup sour cream ¼ cup butter ¼ cup shortening ½ cup water 2 tsp cinnamon 1 ¼ tsp baking soda 1 tsp baking powder ¾ tsp cloves ½ tsp salt ½ tsp ground nutmeg 2 eggs In a large bowl beat all cake ingredients on low beat for 30 seconds, scraping constantly. Beat on high another 3 min. scraping occasionally. Pour into 2 round 8 or 9 ″ pans. Bake 30 – 35 minutes or until toothpick comes out clean. Cool completely, about 1 hr.
