White Hot Chocolate

1 block dark chocolate
12 ounce white chocolate, finely
chopped
6 cups whole milk
2 cups heavy cream
1 teaspoon pure vanilla extract
marshmallows
Using a vegetable peeler, shave
chocolate into curls; set aside. Place white chocolate in medium
heat proof bowl; set aside. Place milk and cream in medium saucepan
and set over medium heat until bubbles begin to form around the
edges of pan (about 4 minutes), do not boil. Remove mixture from
stove and immediately pour over white chocolate. When chocolate
begins to melt, gently stir to combine. Wish in vanilla and
continue whisking until light foam forms. Garnish with chocolate
shavings and marshmallows.
