Oatmeal Cake

“This is such a moist cake and so easy to make!”
1 cup quick oats
1 1/2 cups boiling water
1 stick oleo
1 cup
brown sugar
1 cup white sugar
2 eggs
1 1/3 cups flour
1 tablespoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
Frosting:
3/4 cup brown sugar
6 tablespoon oleo or margarine
2 tablespoon milk
Add your choice: 1 cup coconut, 1/2
cup chopped nuts or 3/4 cup oatmeal
Mix quick oats and boiling water
and let stand for 20 minutes.
Combine oleo, brown sugar, white sugar & eggs. Add the oatmeal
mixture and mix. Add flour, baking soda, salt & cinnamon to the
mixture. Pour into a 9 x 13" greased pan and bake at 350 degrees
for 35 to 40 minutes.
To make frosting; combine brown sugar, oleo and milk. Melt over low
heat. Add your choice of coconut, nuts or oatmeal.
Spread on baked cake as soon as mixture is done. Place in broiler
for 1 to 2 minutes, being careful not to burn. (May double the
recipe)
