Pineapple Coconut Squares

2 tablespoons butter, melted
3 tablespoons sugar
1 egg
1 cup flour
1 teaspoon baking powder
2 (8 oz.) cans unsweetened crushed pineapple, drained
TOPPING:
1 tablespoon butter, melted
1 cup sugar
2 eggs
2 cups flaked coconut
In a large bowl, cream butter, sugar and egg until light and
fluffy. Add flour and baking powder; stir to mix. Press into a
greased 9 inch square baking dish, Spread pineapple over crust;
set aside.
For topping, in a small bowl, beat butter, sugar and eggs until
blended. Stir in coconut. Spread over pineapple. Bake at 325°
for 35-40 minutes or until golden brown. |
