Scalloped Corn

“At our house, this recipe is a must at every holiday meal.”
4 cups frozen corn
3 eggs, lightly beaten
1 cup milk
3/4 cup crushed saltines crackers
3 tablespoons butter or margarine, divided
1 tablespoon sugar
1 tablespoon finely chopped onion
Salt and pepper to taste
Topping: ¼ cup crushed saltine crackers
In a large bowl, combine all ingredients. Transfer mixture to a
greased baking dish. Sprinkle with ¼ cup cracker crumbs. Bake,
uncovered, in 325° oven for 1 hour.
NOTE: In the summer I use fresh corn.
