Tropical Fruit Pizza

“The pudding mixture was supposed to be for a fruit dip, but I turned it into a fruit pizza layer and created this recipe. YUM!”

1 package slice and bake sugar cookies
1 small can crushed pineapple
1 (8 oz.) cream cheese (1/3 less fat)
1 (3.4 oz.) pkg. instant coconut cream pudding mix
1 (8 oz.) carton Cool Whip, thawed
1 small can mandarin oranges, reserve juice
2 kiwi, sliced
1 banana, sliced
blackberries, washed and dried
blueberries, washed and dried
¼ cup toasted coconut, optional

Spread cookie dough on greased pizza pan or pizza stone. Bake in 350 degree oven until very light brown. Be careful not to over bake. Cool. Slice banana and place in bowl with reserved juice; set aside. Drain juice when ready to arrange fruit. Put in blender the pineapple with juice, cream cheese, dry pudding mix. Blend until smooth (use a little reserve orange juice if needed). Chill slightly. Fold Cool Whip into pudding mixture; spread on cooled crust. Arrange fruit in any manner to look nice. Sprinkle with toasted coconut if desired. Chill fruit pizza until ready to serve. Cut into squares or slices to serve.
