Beans with Bacon

“My family’s summertime favorite for years.”
6 slices bacon
¼ cup chopped onion
1 ½ pounds fresh green beans
½ cup chicken broth
dash black pepper
½ teaspoon salt
2 tablespoons tomato paste
1 tablespoon butter, optional
Fry bacon in large skillet until crisp. Remove bacon from
skillet, chop into pieces; set aside. Reserve 1 tablespoon bacon
grease in skillet; add onion and cook until tender. Stir in
green beans, chicken broth, black pepper and salt. Heat until
boiling; reduce heat and simmer for 20 minutes, or until beans
are tender. Mix in bacon pieces, tomato paste and butter if
desired. Heat thoroughly and serve when hot.
