Chocolate Zucchini Cake

“Another way to use zucchini.”


1/2 cup butter
1/2 cup vegetable oil
1 2/3 cup white sugar
2 eggs
1 tsp vanilla
1/2 teaspoon chocolate flavoring
2 1/2 cup flour
1 teaspoon baking soda
1/4 cup cocoa
1/2 teaspoon salt
1/2 cup buttermilk
2 cup shredded zucchini
6 oz chocolate chips
1/2 cup nuts

Beat together butter, oil and sugar. Add eggs one at a time, beating well with each addition. Blend in vanilla and chocolate flavoring. Combine dry ingredients and add to the above alternately with buttermilk, beating well. Stir in zucchini, chocolate chips and nuts. Pour into a greased 9x13 baking pan. Bake in a 325 degree oven for about 55 minutes until cake is completely baked. You can ice cooled cake or not.
