BBQ Chicken Sandwiches
2 cups shredded cooked chicken
Sauce:
1/2 cup chopped onion
1/2 cup diced celery
1 garlic clove, minced
1 tablespoon butter
1/2 cup salsa
1/2 cup ketchup
2 tablespoons brown sugar
2 tablespoons cider vinegar
1 tablespoon Worcestershire sauce
1/2 teaspoon chili powder
1/4 teaspoon salt
1/8 teaspoon pepper
Cook and shred chicken; set aside. In a large saucepan, melt
butter; sauté the onion, celery and garlic. Stir in the
remaining sauce ingredients. Add chicken; stir. Heat mixture
until hot and bubbly. Serve on toasted buns.
Note: Another good way to fix this is by spooning BBQ chicken
onto buns and top with coleslaw.
