Spiced Apple Butter

4 pounds Granny Smith apples, peeled, cored and quartered
1 cup water
1 cup apple cider
brown sugar (1/2 cup per cup of puree)
2 teaspoons cinnamon
1 teaspoon ground cloves
1/2 teaspoon allspice
juice of 2 lemons
lemon rind, optional amount
In crock pot, cook the apples, water and apple cider until
apples are tender. Pass cooked apples through a food mill (can
use food processor or blender). Pour back into crock pot. Add
appropriate amount of brown sugar, the spices, rind and lemon
juice; cook over very low heat until thick and dark brown. This
may take 3 to 4 hours. Serve warm or chilled.
