Cheesecake Bars

“Great quick way to have cheesecake without the wait!”
1/3 cup butter, soft
1 cup flour
1/3 cup brown sugar
1 egg
2 tablespoons milk
2 tablespoons lemon juice
¼ cup sugar
½ teaspoon vanilla
1 (8 oz.) package cream cheese, softened
In mixing bowl, use pastry blender to cut butter into mixture of
flour and brown sugar until mixture resembles small peas.
Reserve 1 cup; set aside. Press remainder into 8 x8x2 ungreased
pan. Bake 12 – 15 minutes or until lightly browned. Remove from
oven. Meanwhile, blend remaining ingredients; pour over baked
crust. Top with reserve 1 cup crumbs. Bake for 25 – 30 minutes
or until knife comes out clean. Cool completely before cutting!
Store airtight in refrigerator.
EDITOR’S Note: You can add a teaspoon of strawberry or raspberry
preserves in the middle of each square right before serving.
