On November 14th,
National Diabetes Day, Abraham Lincoln Memorial Hospital partnered
with the University of Illinois Extension to offer a free pressure
cooking class. The class was very well attended as many came
together to learn more about preparing healthy meals quickly
utilizing electric pressure cookers such as the Instant Pot.
The class was led by Nutrition and Wellness Educator Lisa Peterson
from the U of I Extension, ALMH Dietician Jennifer DiPasquale, and
Registered Nurse and Certified Diabetes Dietician Sarah Tierney .
In the first hour of the evening, Peterson talked about the variety
of cookers available today, noted the key functions of each and
spoke about safety while using the pressurized pots.
