This coming Sunday, March 19th an
annual tradition in Lincoln will take place at the
Lincoln Knights of Columbus Hall. The Boy Scout Spring
BBQ will take place from 10:30 a.m. to 2 p.m. with
dine-in or carry out options. The menu will include
Pulled Pork BBQ, baked beans, cole slaw, potato salad
and a choice of dessert. For youngsters who so desire, a
hotdog meal will also be offered.
The key to the success of this long standing fundraiser
for Boy Scout Troop 102 is the smoked pork. Each year, a
group of scouts meet at the Lincoln IGA a couple of days
ahead of time, and carefully rubdown the fresh pork with
a blend of seasonings. After sitting a day or so in the
coolers at the IGA, the pork will be smoked to
perfection and shredded for those amazing pulled pork
sandwiches we all look forward to on the big day.
This year, the scouts gathered on Wednesday evening for
the annual rubbing event. The scouts who came to do the
work included in the front row Blaine Klemm and Beau
Ford. In the back row from the left are Jackson Mathon,
Riley Simpson, Soren Aukamp and Tommy Karrick. Leaders
Jason Maxheimer and Bret Aukamp were also on hand to
keep an eye on the work. Other scouts came later in the
evening to help out as well.
